I like to give myself additional challenges from time to time, even though life generally feels like one big challenge most of the time. Challenges like no red meat for two weeks or no sugar for a month. I never ever actually pull through and keep away from meat or sugar for that long, but it’s fun to test your limits.
Anyway, for that one or two days that I do manage to stay away from sugar, I usually fill up on this delicious sugar-free jam with raspberries and chia seeds. You can’t even tell that it doesn’t have any sugar, it’s perfect!
1 cup fresh raspberries
2-3 tablespoons of chia seeds
(a pinch of vanilla)
Toss the berries into a pot, bring to a boil and mash by pressing with a ladle. Add the chia seeds, remove from heat and let cool. Add some vanilla if wanted and enjoy with a batch of fresh croissants!
